The recipe comes from the Foodie’s Guide to Everything , a delicious book written by Michele Wolman and published by American Homebrewers Association.
The recipe comes with a couple of tips on how to make a waffle with different ingredients, like cocoa butter, coconut milk, and even a dash of coconut oil.
If you don’t have any coconut oil on hand, this is an easy way to add a touch of flavor to your waffle while avoiding the dreaded coconut oil mess.
Here’s how to whip up a chocolate chip cookie waffle: In a large bowl, mix together the ingredients for the chocolate chip cookies: 1/4 cup sugar, 2 tablespoons of vanilla extract, 1/2 teaspoon baking soda, 1 1/3 cups all-purpose flour, 1 teaspoon baking powder, and 1 teaspoon salt.
Add the butter to the bowl, along with the cocoa butter and vanilla extract.
Using a pastry cutter, cut out circles around the dough.
Sprinkle with 1/8 teaspoon baking sugar and pinch a pinch of salt to coat the cookie dough.
Bake in the oven for about 30 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, remove the cookies from the oven and let cool.
In a bowl, combine the remaining ingredients for a chocolate buttercream: 1 cup heavy cream, 2 cups powdered sugar, 1 cup brown sugar, and a dash or two of vanilla.
Pour the cream mixture into the bowl of a stand mixer fitted with the paddle attachment, and beat on high speed until the cream thickens.
Slowly add the powdered sugar until the sugar is completely dissolved.
Mix in the remaining 3 ingredients in a mixing bowl and beat until combined.
Stir in the brown sugar and vanilla until the batter is smooth.
Serve warm with whipped cream or whipped cream sauce.
